Duck filet marinated in coconut with coriander & papaya-mango sauce

Brown sauce base

DIRA papaya cubes

Preparation

Marinate the duck filet for 24 hours in the coconut puree, coriander and sambal in the refrigerator.

Bake the duck filet (without butter or oil) –  first bake the fat side – approximately 5 minutes on each side.

For the sauce: use half of the marinade, boil with the brown sauce base, the chicken broth and the mango puree until you get a smooth sauce.

In the end, add the mango and papaya cubes.
